I am very new to this and am crawling through each step, I am at the point where I am going to be soldering the Temp probe non-isolated board.  My question is do I solder the resistors? one? both?  I know it may sound simple, but my level of expertise is 0.

Can you provide links to the products you're referring to?

These resistors are for pulling the SDA and SCL lines high (to 3.3 volts). The Raspberry Pi already has pull-up resistors, so there's no need to add any more.
